- 3 cups cooked rice (preferably day-old)
- 1 lb boneless chicken breast, diced
- 3 large eggs, beaten
- 1 cup frozen mixed vegetables (peas, carrots, corn)
- 3 green onions, sliced
- 3 cloves garlic, minced
- 1 tablespoon fresh ginger, minced
- 3 tablespoons vegetable oil
- 3 tablespoons soy sauce
- 1 tablespoon oyster sauce
- 1 teaspoon sesame oil
- 1/2 teaspoon white pepper
- Salt to taste
- 2 tablespoons sesame seeds for garnish

Heat 1 tablespoon oil in a large wok or skillet over high heat. Add beaten eggs and scramble until just set. Remove and set aside.

Add another tablespoon of oil to the wok. Add diced chicken and cook until golden brown and cooked through, about 5-6 minutes. Remove and set aside.

Add remaining oil to the wok. Add garlic and ginger, stir-fry for 30 seconds until fragrant.

Add frozen vegetables and stir-fry for 2-3 minutes until heated through.

Add day-old rice, breaking up any clumps with a spatula. Stir-fry for 3-4 minutes until rice is heated through.

Create a well in the center of rice. Pour soy sauce and oyster sauce into the well, then mix everything together.

Return chicken and scrambled eggs to the wok. Add sesame oil and white pepper.
